Ingredients :
- 4 oranges
- 2 cups of sugar
- 1 cup of sugar
- 2 cups of water
Preparation :
Cut oranges lengthwise into eight wedges each. Remove the pulp from the peel (reserve the pulp for later use). Cut each peel quarter lengthwise into thirds. Remove excess white skin to 1/4-inch (5 mm) thickness.
Place orange peel strips in a pan of cold water and bring to a boil. Drain and rinse with cold water. Repeat the process one more time and set aside.
In another saucepan, bring 2 cups (500 ml) of the sugar and water to a boil over medium-high heat, stirring, until the sugar is dissolved. Boil, without stirring, for about 20 minutes or until the mixture has the consistency of syrup. Add the reserved orange peel strips to the syrup, reduce the heat and simmer for about 30 minutes or until translucent and softened. Cool in syrup for 4 hours (do not stir).
Using a skimmer, place the orange peels on a rack on a baking sheet. Roll each strip in the remaining sugar and let stand for about 4 hours or until dry. (You can prepare the candied orange peels in advance and put them in an airtight container, separating each layer with a sheet of wax paper. They will keep for up to 2 weeks at room temperature).
