Homemade Polvorones recipe
Ingredients for 12-15 units
350 g pastry flour
40 g ground raw almonds
80 g icing sugar (up to 100 g if you like them sweeter)
More icing sugar for decoration
110 g Iberian lard
A dash of aniseed
¼ spoonful of cinnamon
How to make homemade polvorones
The evening before, place the flour and ground almonds in an ovenproof tray. The flour must be well sifted and well mixed with the almonds. If you are going to use the Thermomix, put the flour and the almonds in the mixing bowl and program 30 sec. on progressive speed until you reach 10.
Preheat the oven to 130˚C, heat up and down and bake for 30 minutes, stirring occasionally with the spatula. It will take on a slightly toasted colour. It is important not to overdo it, otherwise the mixture will become bitter. Leave to rest until the next day.
Form a volcano with the flour and put the ingredients inside, mixing them until you get a uniform dough, with which you can make a slightly flattened ball, which you will put in the fridge for between 30 minutes and an hour wrapped in transparent plastic.
Take it out of the fridge and flatten the dough a little with the palm of your hand. Leave it a little thick and gently roll it out with a rolling pin to even out the surface. Use for example a glass of wine as a cookie cutter, and make the polvorones.
Leave to stand for at least an hour. Preheat the oven to 200˚C, grill only, and bake for 15 minutes, making sure they don't burn. Remove from the oven, and when they are cool, sprinkle with plenty of icing sugar.
